The Fresh Cheese is characterized by its high moisture content, white mass, soft consistency, fresh, smooth flavor and without acidity.
It does not go through drying process, being packed and sold as soon as it is produced. It usually produces an excess of serum, which must be constantly (1 to 2 times a day) discarded by the consumer.
Its expiration date is short, up to 20 days, assuming that it is properly refrigerated (refrigerator between-2°C to 4°C) and in a closed container.
