Made from pasteurized cow’s milk, which is hanged, salted and matured.
It is different from the Standard cheese because it has a drier, firmer mass, with a yellowish peel.
The flavor is very pronounced and acid. Excellent to be grated or to eat as a snack, it gives a very marked flavor to dishes where it is mixed.
It does not have an expiration date and the longer it matures, the more flavor it adds.
